Rainbow-licious (kinda)

Today though warm, was very windy.  So after school, a few errands and a little time whisking in the wind we came in the house and started a little rainbow craft.

I originally saw this on UCreate With Kids and she got it from a great blog B.Inspired, Mama! (which I fully intend to visit more frequently).  I thought it was such a cute idea for St.Patrick's Day.  I am usually out for the day o' green, but this year is looking to be more tame.  I am not sure of our plans yet but I thought if we have a little party this might be a fun treat.  Festive and delicious.

RAINBOW COOKIES

What you will need:

 sugar cookie dough (prepared from scratch or mix)

  liquid food coloring in red, blue, green, and yellow

  plastic wrap

What you do:

1. Divide sugar cookie dough into 4 bowls.
    2.  Add one color of food coloring to each bowl and mix into dough. You'll need to use quite a bit to get such bright colors -MIX USING A FORK or SPOON in case you didn't think of that =)

  2. Lay a sheet of plastic wrap on table/counter. Form the blue dough into a log and press into rectangle shape
  3.  
    4.   Form the green dough into a log and press flat onto the blue dough. 

5. Form the yellow dough into a log and press flat onto the green dough.


6. Form the red dough into a log and press flat onto the yellow dough.


5. Using the plastic wrap to lift the edge, gently roll the rectangle of dough up into a log.
 
6. Wrap in plastic wrap and place in freezer until firm but not frozen. Ours took about an hour.


    7. Remove from freezer and slice log into small discs.
    8. Place a couple inches apart on ungreased cookie sheet and bake according to dough recipe directions.
    I have to say ours did not come out as well as the ones I read about.  I'm not sure if I messed up somehow.  I do have to admit sugar cookies are NOT my strongest deliciousness.  Also, unlike me normally baking from scratch (yeah I am that Mom- 1 mommy point for me. LOL) I used the ready bake sugar cookie dough. 
Ours looked more like tie-dye cookies than rainbow cookies, but they were still cookies. =)  The kids enjoyed making them and it took up a good portion of the afternoon to bake them.  Maybe not our best, strongest, most delicious activity; but a fun one =)  You should try it!
